Our handcrafted pączki are brioche-like pastries with a rich, airy taste to every bite. With an 87% hydration, the dough is difficult to work with and at its breaking point, but it is worth it: each bite is complex, tender, pillowy. Each undergoes a pate fermentee, an initial rise, a cold fermentation overnight, and a long rise in the morning before it is fried, allowing yeast to develop maximum flavor in the dough. We serve our pączki with a number of carefully curated jams and pastes.
